Zucchini & Pork Soup

Ingredients

  • 300 g lean pork, cubed
  • ¼ cup flour
  • 1 tsp SIDS CRAZY SALT
  • 2 tsp rice bran oil
  • 1 onion chopped
  • 2 cloves garlic, chopped
  • 1 orange capsicum, deseeded & chopped
  • 1 zucchini, quartered & chopped
  • 1 tbsp sundried tomatoes, chopped
  • 100 g fresh mushrooms, sliced
  • 450 g can diced tomatoes (or fresh)
  • 450 g chicken broth
  • 1 tbsp SIDS HOT WORCESTER SAUCE
  • 1 tsp dried basil
  • ¾ tsp dried oregano
  • SIDS SALT & PEPPER
  • 3 tbsp Parmesan cheese, grated

Directions

  1. Place flour, pork & SIDS CRAZY SALT in a resealable plastic bag and shake to coat.
    In a large pan with some oil, brown pork for 8-10 minutes. Set aside.

    In a soup pot using the remaining oil, sauté the onions, garlic & capsicum for a few minutes until tender but not brown. Add everything else, including chicken broth, SIDS SALT & PEPPER, SIDS HOT WORCESTER SAUCE, into the soup pot and simmer for 10-15 minutes. Sprinkle with Parmesan cheese & serve.
