Za’atar Roasted Carrots with Labna

- 2½ tbsp olive oil, divided
- 5 cups diagonally cut carrots, 5 cm thick
- 1 tbsp za'atar
- 1 tsp SIDS SALT & PEPPER
- ⅛ tsp ground cumin
- ¼ cup chopped fresh flat-leaf parsley
- 1 tbsp fresh lemon juice
- 6 tbsp labna or Greek yogurt
Preheat the oven to 220°C.
In a large bowl, toss the carrots with 4 teaspoons of oil. Add the za'atar, ½ teaspoon SIDS SALT & PEPPER and cumin. Toss to evenly coat the carrots. Arrange the carrots in a single layer on a baking sheet. Bake for 18 minutes until tender and lightly browned, stirring every so often.
Return carrots to the bowl and drizzle with the lemon juice.
Serve carrots with labna. Drizzle with the remaining olive oil and a sprinkle of SIDS SALT & PEPPER and fresh parsley.
