Za’atar Pork Tenderloin, Sweet Potato & Cauliflower


  • 500 g pork tenderloin
  • 2 large sweet potatoes, peeled & cut into 1 cm cubes
  • 1 large cauliflower head, cut into large florets
  • 2 tbsp rice bran oil
  • 4 tbsp za'atar spice blend


  1. Preheat oven to 230°C.
    Place pork, sweet potatoes and cauliflower on a large baking sheet or oven-proof dish. Drizzle with oil and sprinkle with za'atar. Toss vegetables and rub tenderloin to coat with oil and
