Tuna Starter à la Sid

Ingredients

  • TUNA:--
  • 500 g tuna fillet, skin on
  • 1½ tbsp rock salt
  • 4 tbsp EV olive oil
  • DRESSING:--
  • 2 tsp fine grated lemon zest
  • 2 tsp fine chopped chives
  • 1 tbsp red onion, fine sliced
  • 4 tbsp radish, fine sliced
  • ½ tsp SIDS CRAZY LEMON
  • SIDS SALT & PEPPER to taste

Directions

  1. TUNA: Rub the flesh and skin with salt. Wrap in plastic wrap and refrigerate for 2 days, turning often.
    Scrape the salt from the fish and pat dry with a paper towel. Remove the skin then taste - if too salty, rinse in running cold water. Thin slice (2 mm) the tuna and place in a single layer on 6 plates.
    DRESSING: Just before serving, combine all the ingredients including
    SIDS CRAZY LEMON and SIDS SALT & PEPPER to taste.
    Wash the salt off the skin, pat dry then fry in a little oil until crisp. Serve, a piece each, in a ramekin.

    Divide the dressing evenly between the 6 plates, drizzle with oil (2 tsp each) then serve.

    Tip: You may want to replace EV olive oil with a flavoured oil. If so, ensure that the oil doesn't overpower the dish. Blending of oils may be required.
