Smoking with a Weber Smoker Box

Clean a previously used Smoker Box before starting.
Soak wood chips in a bowl of water for 20 minutes. Drain, place chips in the smoker box then place in the BBQ.
Light flame and preheat on HIGH for 20 minutes. Reduce flame to MEDIUM, add food, close lid and cook to desired doneness.
Below are the suggested woods for smoking various foods -
- FISH - apple, cherry, pecan
- CHICKEN - apple, cherry, pecan, hickory
- PORK - apple, cherry, pecan, hickory, mesquite
- LAMB - pecan, mesquite
- BEEF - pecan, hickory, mesquite
- VEG - apple, cherry
These are just a guide - don't be afraid of experimenting. Try MANUKA, as it has that typical NZ flavour.
