Roast Chicken


  • size 14 chook
  • 360 g salt
  • 6 litres water
  • stuffing for chook
  • 20g butter
  • ½ tsp SIDS CRAZY LEMON or


  1. Make a brine of 60 g salt per litre of water. Place chicken in brine, fully submersed, cover & leave overnight. Drain, pat dry then remove the wishbone. Insert your favourite stuffing.
    Mix well
    SIDS CRAZY SALT or SIDS CRAZY LEMON with the softened butter and apply liberally onto all exterior parts of the chicken.

    Cook in oven at 90oC for 1½ hours. With a temperature probe, check the temperature in the thickest part of the breast. At 70oC, remove from the oven and rest for 45 minutes. Baste and return to oven set to highest temperature and cook a further 10 minutes to brown.
    Serve by removing the breast and slicing across the fibres.
