Pumpkin Fritters (pampoenkoekies)

Ingredients

  • 1 cup pumpkin purée
  • 1 egg, lightly beaten
  • 1 cup flour
  • 1 teaspoon baking powder
  • ¼ tsp SIDS CRAZY LEMON
  • pinch of curry powder
  • ½ tsp salt
  • 4 cups rice bran oil for frying
  • cinnamon sugar

Directions

  1. In a bowl, combine pumpkin, egg, flour, baking powder, SIDS CRAZY LEMON, curry powder and salt. Mix until smooth.
    Heat oil in a deep saucepan to 165°C. Drop batter by spoonfuls into hot oil. Fry until golden brown, about 2 minutes. Remove with a slotted spoon and serve immediately, with a sprinkle of cinnamon sugar.
