Oyster  Leek & Potato Soup

Ingredients

  • 50 g butter
  • 2 leeks, white only, fine sliced
  • 250 g potatoes, peeled & thin sliced
  • 1 litre chicken stock
  • SIDS SALT & PEPPER to taste
  • 1 tsp SIDS CRAZY SALT
  • 12 fresh Pacific oysters
  • 80 mls cream

Directions

  1. Melt the butter in a large pan on low heat. Add leeks and potatoes to sweat for 5 minutes. Add chicken stock and SIDS CRAZY LEMON then simmer until potatoes are soft then remove from heat. Place in a food processor and blitz until smooth. Season with SIDS SALT & PEPPER then return to pan. Add oysters and simmer for 3 minutes. Remove from heat and add cream.
    Pour soup into bowls and place 3 oysters in each.
