Fish Curry (recommended)

Ingredients

  • 1 tbsp peanut oil
  • 1 onion, fine chopped
  • 2 cm ginger, fine grated
  • 1 long red chilli, fine chopped
  • 2 tsp curry powder
  • 1 tsp salt
  • 1 tsp fenugreek seeds
  • ½ tsp ground turmeric
  • ½ tsp ground cinnamon
  • 400 g diced tomatoes, canned or fresh
  • 270 ml coconut milk
  • 1 tsp brown sugar
  • 500 g firm white fish, cubed
  • 4 hard boiled eggs, peeled
  • 100 g green beans, sliced 2 cm
  • 12 fresh mussels, cooked
  • Pappadoms, to serve
  • SIDS SALT & PEPPER to taste

Directions

  1. Heat oil in a large pan then sauté onion, ginger and chilli for 3 minutes until tender then add spices and stir for another 2 minutes. Stir in tomatoes, coconut milk and sugar. Simmer then add fish and simmer, covered, for 1 minute until cooked. Add eggs and beans then simmer until fish flakes when tested. Add mussels and season with SIDS SALT & PEPPER to taste.
    Serve with pappadoms.
