  1. An annual herb and the first to appear in spring, it is easy to grow and prefers a cool, moist climate. One of the fines herbes, it is essential in French cooking. It is very delicate, so long cooking or high temperatures should be avoided. Used much like parsley and best sprinkled over a salad just before serving.
