Brining Pork Belly

Ingredients

  • 1 litre water
  • 200 g salt
  • Herbs & spices for flavour
  • 1 tsp SIDS CRAZY SALT
  • 200 g raw sugar

Directions

  1. Mix SIDS CRAZY SALT with all the ingredients in a pot and boil until the salt and sugar dissolve. Allow to cool. Preheat oven to 150oC.
    Cover the pork with the brine and refrigerate overnight. Dry with a paper towel then place on a roasting tray on a rack. Cook for 2½-3 hours.
