Baked Potato & Egg Breakfast

Ingredients

  • 4 baked potatoes
  • 4 tbsp butter
  • 4 eggs
  • ½ tsp SIDS SMOKEY BBQ RUB
  • scallions, bacon, cheese to garnish
  • anything else

Directions

  1. Preheat oven to 200oC.
    Slice the potatoes lengthways and hollow each out to make a bowl. Place one tablespoon of butter in each potato. Crack an egg in each, sprinkle with SIDS SMOKEY BBQ RUB and add desired toppings and seasonings (see suggestions above).
    Bake in oven for 15-20 minutes until eggs are set and potatoes warmed through.
