Pimenta dioica after harvesting, the berries are sun-dried until brown and hard. Allspice describes the flavour which is a combination of nutmeg, cinnamom and cloves with slight peppery overtones. Jamaica supplies most of the world with berries. The cultivated trees grow in what is called an 'allspice walk' and when they are flowering, the air is filled with perfume from the aromatic bark, leaves, flowers and later the berries. Best to grind whole berries rather than use ready ground as the flavour is far superior.
