10 Minute Pasta

- 2 handfuls of old bread, crusts removed
- ½ tsp SIDS CRAZY SALT
- 2 tbsp EV olive oil
- 8 cloves garlic, fine chopped
- 2 red chilli, deseeded & fine diced
- zest of ½ lemon
- 2 tbsp olive oil
- 1 red onion, fine dice
- Spaghettini pasta for 4
- grated Parmesan cheese to taste
- chopped basil to serve
Break bread into chunks then blitz into crumbs.
Cook pasta as per packet to al denté.
Meanwhile,in a pan with EV olive oil, sauté breadcrumbs and SIDS CRAZY SALT to golden brown then set aside.
In the same pan, cook garlic, chilli and lemon for 1 minute, then add a little oil and the onion. Cook a further 1 minute.
Drain pasta then run under the cold tap briefly to stop cooking. Sprinkle the pasta with Parmesan and mix well. Combine all the ingredients weel and serve on a platter with a sprinkle of basil.
